Das ist ein Rezept, das ich wahnsinnig gerne koche, weil es so lecker und relativ einfach zu machen ist. … und weil die Suppe gerade kocht, wollte ich das kleine Rezept mal niedertippen und mit euch teilen.

Zutaten für 4 Personen:

  • 1 Zwiebel
  • 3 Karotten
  • 1/4 Knollensellerie
  • Petersilie
  • 1 Paprika
  • etwas Lauch
  • Erbsen/ Brechbohnen/ Blumenkohl/ Brokkoli – nach Wunsch (wenn ich nicht alles frisch bekomme, nehme ich gerne auch ungewürzte Mischungen aus dem Gefrierfach)
  • Kokosmilch (Bio ohne Zusätze, manchmal fettarm – meine ist vom Kaufland)
  • Currypaste – scharf oder mild, nach Geschmack (für Vegetarier und Veganer: unbedingt auf eine ohne Fisch/Schalentiere achten!)
  • etwas Raps- oder Sonnenblumenöl

Zubereitung:

  • Die Zwiebel würfeln und mit etwas Öl in den Topf geben, die Zwiebeln goldbraun anrösten.
  • Währenddessen den Sellerie, Karotten, Lauch und Paprika würfeln und ebenfalls in den Topf geben. Etwas anschwitzen und ca. 2 EL Currypaste hinzugeben. Gut durchmischen und mit der Currypaste erhitzen.
  • Kokosmilch hinzugeben und ebenfalls erhitzen lassen.
  • Das übrige Gemüse waschen, klein schneiden und in den Topf geben und mit kochendem Wasser aufgießen, anschließend ca. 40 Minuten kochen.
  • Nach dem Kochen pürieren und kleigechackte Petersilie untermischen, wieder etwas aufkochen lassen und servieren.

This is a recipe, that I love to cook because it’s so easy and fast to make… and I actually have it cooking right now. So I wanted to share it with you.

Ingredients (for 4 people):

  • 1 onion
  • 3 carrots
  • 1/4 celeriac
  • parsley
  • 1 bell pepper
  • some leek
  • vegetables as: peas, French beans, cauliflower, broccoli – as you like it (if I can’t get everything fresh, I like to take frozen mixes, but they need to be unseasoned)
  • Coconut milk (I prefer those without additives, sometimes I take the fat reduced one)
  • Curry paste – if hot or mild, is your decision (for vegans and vegetarians: please check, if the curry paste is indeed vegan/vegetarian, many have fish in them)
  • some oil

Preparation:

  • Chop the onions and put them directly in the pot with a little oil.
  • Chop the carrots, celeriac, leek and bell pepper and put it into the pot when the onions are golden-brown and sauté the mix.
  • Add 2 spoons of the curry paste, mix it well and let it get hot.
  • Add the coconut milk and wait until it cooks. Add then the rest of the vegetables and fill the pot up with some boiling water and cook it for about 40 minutes.
  • Pureé the mix after cooking and add choped parsley, let it cook for another 5 – 10 minutes and it’s ready to be served.
